Rabbit burgers with Quim Dexter

Quim Dexter reports from the kitchen, where he's just cooked a bunny in a bap.


Sixty per cent rabbit, 40% belly pork.

Sage, Dijon mustard, Worcestershire sauce, salt and pepper, onion, parsley.

Shove in blender.

Press into burgers.

Fry.

Serve with woodpigeon breast and top with Port Salut cheese.

Or you could take them fresh from the field.
